Ingredients to add
For 1kg of special oriental brioche preparation
- 440g lukewarm water
- 60g soft butter
- 40 g baker’s yeast or 15 g dry yeast
Preparation
- Pour the warm water, melted butter and yeast over the mixture.
- Knead with a hook on 1st speed for 5 minutes, then 10 minutes on 2nd speed: the dough will be smooth and homogeneous.
- Allow to stand for 15 minutes.
- Divide your dough into pieces of about 80 g and form into a ball.
- Preparation: 1 hour at 25°C.
- Brush your brioches with a beaten egg before baking in a preheated oven.
- Bake at 180°C – 200°C for 15 minutes. your brioches are then golden brown.
Tips
Decorate with sesame seeds or sugar pearls.
For family brioches, divide into 300 g pieces and shape into a slightly elongated ball to put in a mould. Bake at 180°C – 200°C for about 25 minutes.
